Assas, a village of 1,500 souls, stands on a hill to the east of the Pic-Saint-Loup.

Strategically positioned for an unobstructed view, the village was built around a rich architectural heritage steeped in history: occupied since prehistoric times, the place also served as a control and defence point in Gallo-Roman times. With the availability of attractive land, the peasant populations settled: it was around the XIᵉ century that the village in the form of a circulade, protected by its ramparts, was born. Two towers are still visible today, close to the castle and the Romanesque church.

After this period of military strategy, Assas developed around agriculture (vines, olive trees, cereals, sheep farming...) to become a village of wine growers until 1960.

As the castle is a private site, it can only be visited during Journées du Patrimoine.
